With the abundance of nuts and the myriad of spices available to us, why not combine the two and spike the palate. This makes an ideal nibbler with a cold glass of beer or a tot of scotch. Nuts also make a great addition to Bhel Puri Chaat.
Spiced Nuts – Mazedaar Mumphali

Ingredients
- 1 lb peanuts – red skin Virginia nuts
- or
- 1lb peanuts and raw cashews
- 2 tbsp oil
- 2 tsp salt
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 1/2 tsp mangoe powder (amchoor) or to taste
- 1 tsp cumin seeds, freshly roasted, ground fine
Instructions
- • Preheat oven to 350°
- • In a baking dish, mix the nuts with the oil until evenly coated
- • Add all the spices except for the amchoor
- • Mix well and bake in oven for 15 minutes stirring constantly until lightly browned
- • Peanuts tend to brown and burn rather easily so keep a watchful eye on them
- • Remove from oven. Sprinkle with the mango powder, mix well. Set aside to cool
- • Spiced nuts can be stored in an air tight container.
