Spiced Nuts – Mazedaar Mumphali

With the abundance of nuts and the myriad of spices available to us, why not combine the two and spike the palate. This makes an ideal nibbler with a cold glass of beer or a tot of scotch. Nuts also make a great addition to Bhel Puri Chaat.

Ingredients
  1. 1 lb peanuts – red skin Virginia nuts
  2. or
  3. 1lb peanuts and raw cashews
  4. 2 tbsp oil
  5. 2 tsp salt
  6. 1 tsp red chilli powder
  7. 1 tsp coriander powder
  8. 1 1/2 tsp mangoe powder (amchoor) or to taste
  9. 1 tsp cumin seeds, freshly roasted, ground fine
Instructions
  1. • Preheat oven to 350°
  2. • In a baking dish, mix the nuts with the oil until evenly coated
  3. • Add all the spices except for the amchoor
  4. • Mix well and bake in oven for 15 minutes stirring constantly until lightly browned
  5. • Peanuts tend to brown and burn rather easily so keep a watchful eye on them
  6. • Remove from oven. Sprinkle with the mango powder, mix well. Set aside to cool
  7. • Spiced nuts can be stored in an air tight container.
